In October in Pasto the International Meeting of Andean Flavors takes place: Gastrodiversa (El Encuentro Internacional de Sabores Andinos: Gastrodiversa), a highly relevant gastronomic event that celebrates the richness and diversity of Andean cuisine.
 
Gastrodiversa brings together chefs, producers and food lovers from different countries in the Andean region to share and enjoy a unique culinary experience. Attendees have the opportunity to explore a wide variety of traditional and modern dishes made with ingredients indigenous to the Andes. 

The chefs present their creations, offering tastings of recipes that highlight the richness of local products such as potatoes, corn, quinoa and various Andean tubers. 

The regional cuisines of the different regions of the Colombian Andes have their own space. In addition, workshops and culinary demonstrations are held that allow participants to learn about cooking techniques and the preparation of typical dishes.
 
The festival also includes conferences and round tables on the history and importance of Andean gastronomy in cultural identity and its impact on sustainable development. Concerts by indigenous Andean music groups complete the immersive atmosphere of the festival. 

The International Meeting of Andean Flavors: Gastrodiversa not only celebrates culinary diversity, but also promotes tourism in Pasto, strengthening the link between local culture and regional gastronomy.
