In May, Villa de Leyva is the scene of one of the most important gastronomic festivals in the region: the Meeting of Flavors and Knowledge (Encuentro de Sabores y Saberes), an event that has been held annually since 2015 in this town in Boyacá.
The meeting aims to celebrate the traditional gastronomy of the region, highlighting its history and ancestral origins. Thus, for example, recent editions of the festival have focused on the importance of the stone mill as an element that transforms cereals such as wheat and barley.
The main event of the meeting is the preparation and tasting of typical recipes from the region, with the participation of chefs from other municipalities such as Moniquirá, Tinjacá or Ráquira, who come to Villa de Leyva to pay tribute to their characteristic dishes.
The days of the festival are the perfect time to taste little-known traditional preparations such as ruya soup or sotaquireño Indians, ancestral dishes of the region.
Peasant markets are also held with characteristic products such as Andean tubers: cubios, broad beans, ibias and rubas.
The Meeting of Flavors and Knowledge offers a space for interaction between local producers, chefs and the public, promoting cultural exchange and the development of the local economy.
This festival not only celebrates the gastronomy and traditions of Villa de Leyva, but also promotes tourism and strengthens the cultural identity of the community, making it an event of great importance for the region.
